Fried Hor Fun 炒河粉

Like me, most of the older generation would very much like to have the wok hei ‘charred taste’ for our hor fun. I remember when I was young, I do not like to go to my grandma’s kitchen. She used fire wood for her cooking. When grandma cook hor fun, the fire she use was so strong that I was afraid to go near the wok. Grandma also used pork lard for all her cooking. The combination of wok hei plus pork lard make the hor fun really delicious.

Wok hei can only be achieved under conditions of intense heat, at levels that are difficult to achieve using our home kitchen stove.

This recipe is a good alternate to prepare this wonderful local favorite right in your kitchen. It is an easy and quick dish for busy individuals.

Serving: for 4 person


  • 500g hor fun, flat rice noodle
  • 1 tbsp cooking oil
  • ½  tbsp dark soy sauce
  • ½  tbsp soy sauce
  • 100g prawns, clean, shelled and deveined
  • 150g pork belly thinly slice, marinate with ½ tsp of soy sauce and a dash of pepper
  • 200g chye sim 菜心 cut to 1 inch
  • 2 cups of water or chicken stock
  • 4 garlic, fine diced
  • 2 eggs, beaten lightly
  • 1 tbsp cooking oil
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • a dash of pepper
  • 2 tbsp of corn flour, mix with 2 tbsp water


  • Heat wok with 1 tbsp of oil on high heat. Add in the hor fun and fry for a couple of minutes. Add in the soy and dark soy sauce. Continue to fry for a few minutes and set aside.
  • Add the pork belly into the wok and fry till almost cook.
  • Add in the prawn continue to fry till prawn curl up and set aside.
  • Add a table spoon of oil into the wok and add in the minced garlic.
  • Once garlic getting brown add in chye sim stalks and fry for a minute.
  • Add in water or chicken stocks and bring to boil.
  • Once boil add in chye sim leaves, pork belly and prawns. Mix well and season with oyster sauce, soy sauce and dash of pepper.
  • When boil thicken with corn starch till desire consistency.
  • Swill the eggs into the ingredient let it stand for 30 seconds and mix.
  • Add in the hor fun mix well and serve.
